Captain Doug's Recipes

Ingredients:

1 Box Shore Lunch or Frying Magic Breading Mix

4 or 5 Eggs- beat together for egg wash

Pepper to taste                                                        

Oil for deep frying

1 Large bag rice- I use the boil in bags

4 to 6 Salmon Fillets- Smaller Coho or Steelhead work best for this but any Salmon Fillet will work

 

Put your breading mix in Zip-lock bag, add pepper to taste. Mix your eggs in bowl for egg wash. Heat oil to deep fry to 325 to 350 degrees. I usually just put an inch or so of oil in a large skillet and fry about 4 min on each side, a little longer if the fillets are thick, don't overcook.

In a side pot of water, boil rice and then drain

Put fillets in egg wash and then in bag of breading, place in hot oil and cook 4 or 5 min per side!

Place a helping of rice on plate and put cooked fillet right on top.
