Below are some tasty recipes for cooking your catch from Captain Doug. We hope you enjoy them and please return often to see the new ones that we add from time to time.

Blackberry Wine Coho Fillets

Ingredients:

4 Small Coho Fillets

1 Cup Blackberry Wine (inexpensive type from grocery store)

Spice of your choice (I use basil, black pepper, small amount of salt, or an italian spice, anything you like)

3 tablespoons of seedless blackberry jelly

6 Pats of Butter (use real butter, the flavor is much better) 1/4" thick pats

Pat down fillets with paper towels and coat with spices on both sides.

Heat a large pan to medium high heat with NO oil in pan (what your doing here is very similar to blackening fillets)

Put fillets in hot pan and Brown on both sides, only about 5 min. per side, remove fillets from pan and set aside.

With pan still on med high heat pour 1 cup of wine into hot pan, and let it reduce by half.

Turn heat down to medium and add 3 tablespoons of blackberry jelly to sauce.

When mixture is blended well, add the pats of butter one at a time untill all 6 are added.

Finishing sauce should be fairly thin, if you cook too long it will become too thick or burn.

Pour sauce over fillets and enjoy.

Any fruit flavored wine will work but the Blackberry is my favorite.

I also spice the fillets heavy on both sides, this cooks into the sauce after the fillets are removed.
